Come and Get It!
Here are my menu plans for the next week. We already had Cajun Red Beans & Rice on Monday and Chicken Joes on Tuesday. I am wishing for a few new recipes that come recommended!!! (hint hint) I do peruse recipe books about once a month-- but nothing has hit me lately. What's for supper at your house??? MENU FOR THIS WEEK January 15 - January 28 Sunday 15th DISCIPLE WHITTS L-McDonalds S- Frozen Pizza & Fruit Monday 16th - Cole DISCIPLES DARREN Spaghetti Salad Homemade Rolls Tuesday 17th- PIANO LESSONS/FAST FOOD Wednesday 18th - AWANA Bologna Sandwiches Macaroni & Cheese Potato Chips/Dip Bananas Thursday 19th - FREE NIGHT AT HOME Jo's Enchilada Casserole Tortillas Guacemole Chips Friday 20th - Julianna 1 YR SHOTS Roast Beef Carrots & Potatoes Apricot Salad Homemade Rolls Brocoli & Cheese Saturday 21st- Ava & Ty BBALL Hot Wings & Ranch Meatballs & Barbque Sauce Artichoke Dip & Breadbowl Sunday 22nd L- McDonalds S- Frozen Pizza & Fruit

Wish we could come and get it. Craig's been in Colorado all week and our menu has consisted of:

Generic mac and cheese
Frozen pizza pockets
Frozen chicken strips
Leftover pork tenderloin
Popcorn

Yum, right? Don't everyone rush over here at the same time to join us for one of these yummy meals...

Hey- standard mode of operation when Spencer is gone is to make a giant casserole and eat on it as long as we can. My kids don't really get into it... hee hee

Make Ahead Ham Cassserole
Lasagna Casserole
Easy Corn Chowder
Irish-Italian spaghetti
Egg and Bacon Casserole

Easy Corn Chowder Recipe
1 (10 1/2 oz.) can creamed corn
1 (10 1/2 oz.) can corn
2 (10 1/2 oz.) can crm. of celery
2 (10 1/2 oz.) can crm. of potato
1 Cup whole milk

Combine all ingredients in saucepan. Heat and stir.

Okay, I need your chili recipe - something I can make in the crockpot, if you have one. The chili recipe I've used for the last 9 years requires an ingredient (a BIG ingredient)I can't get in St. Louis...

Okay, my real menu plan for this coming week:

F(20) - Chicken tacos
St(21) - Italian porkchops
S(22) - Breakfast casserole
M(23) - Pull-apart chicken
T(24) - Dinner at Moore's (bring salad)
W(25) - Salmon patties
Th(26) - Beans and sausage (need your "official" recipe for this too...)
F(27) - Homemade pizza

A little better than what we had going on around here last week...

Megan-
Here's the Chili Recipe

1 lb ground (hot) sausage, browned and seasoned with chili powder
1 lb ground beef, browned and seasoned with chili powder
2 15 oz cans tomato sauce (more or less, depending on your preference)
1 15 oz can chili beans
1 15 oz can Rotel (If this is too hot, use plain stewed tomatoes.)
Dump everything in a crock pot and then stir in as much chili powder as you like (can stand).
Simmer all day.

Serve on bowls of rice or fritos.
Wal-Mart's refrigerator cinnamon rolls are the perfect side with this. (And serve as a great incentive for Titus and Anna to finish their chili!!)

Megan-

Here's the recipe for CAJUN RED BEANS AND RICE

If it's just my family, I use 1 bag of beans. If it's company too, 2 bags and more of everthing else.

1.) 1 bag of red beans. (You can use pinto beans if you want, but I like the little red beans better. Don't get kidney beans, which are also red.)
2.) Soak the beans overnight with 2 t of baking soda. Drain and rinse the next morning. (This is to keep everyone's tummies happy.)
3.) Place beans in crock pot. Dump these seasonings in:
Creole seasoning (a lot-- I just shake the can until I'm happy.)
Garlic powder (a lot)
Salt (1 t)
Ground Cumin (1 t)
4.) Cook on slow ALL DAY.
5.) About 30 minutes before serving, I chop up a polish sausage and microwave the sausage. Then I dump it in the crock pot.
6.) Serve over bowls of rice with yummy cornbread!!! (Martha White's self-rising cornmeal recipe.)

Wednesday:
B-Eggs and Cinnamon Buscuits
L-Hamburgers Burger King for kids
Me luncheon
S-Hamburgers again after praise team practice. (not real healthy day Ha!)

Thursday
B-blueberry muffins and bannanas
L-Mac and cheese, applesauce
S-pizza, salad

Friday
B-Pancakes, eggs
L-ham and cheese sandwiches
S-Mexican (out)
